Veggie Egg Bites

My misfits market order was delivered today, prompting me to go through my produce inventory and see what needed to be used. After I got done rearranging and re-bagging (I'll take pictures of that ordeal one of these weeks) I had a sack of produce that needed to be used. I turned one into dinner and the rest into these breakfast bites!

I made these in my Ninja Foodi, but have made similar things in my Instant Pot. The kicker with this was being able to air fry AND pressure cook without needing to change a bunch of things.

I LOVE my kitchen aid and all the attachments.  If you plan on sticking around and doing what I do, you should invest in one because I use mine at least 5x a week.

I shredded 2 brown potatoes, 1 large zucchini, two cloves of garlic & half a white onion. I seasoned lightly with regular salt and pepper.

I sprayed the molds with a cooking spray.
**I love the molds - I got them for my instant pot, but you can use them in the Ninja Foodi as well. This is the set I got - amazon link. I use so many of these items all day long, it's worth it.

I used a regular tablespoon to portion these and didn't pack them, just dumped about 1 1/2 in there.

I set up my Ninja Foodi with the air fry basket. I placed the silicone mold directly at the bottom of the basket.

 

Air fry - 400º for 10 minutes.

In the liquid measuring cup I cracked eggs and then used a whisk to scramble them.

I use about one egg per bite. If you're running low on eggs though you can get by with less.

Next, I needed to cook the eggs. I added 2 cups of water to the bottom of the pot.

**When you use the pressure cooker settings, adding water is a must!

Then selected pressure cook, high and for 5 minutes.

I added the pressure cooker lid, made sure the valve was on seal and let it do it's thing.

Viola!!!!

I let them cool before portioning them into baggies for the fridge.
