I got my misfits market order today! I took inventory of all of the fresh produce I had, which led to this amazing dinner.
I had no idea what I was going to do when I started, but it turned out delicious!

See below how simple this dinner was! The salad was prepped earlier in the week using the mason jar salad method, and then I topped it with pine nuts... Everything was wonderful...
before you ask - yes my kids ate it, they love this kind of stuff... For real! They split the last of the salad and wished there was more.

For my sauce I had:
Vine tomatoes
Cherry tomatoes
Broccoli
Garlic
Mushrooms
Green Beans
I added a tiny bit of olive oil to the bottom of the pan and cooked on low. When I put the meat in the ninja foodi to cook, my husband blended this up in our food processor (also a ninja and totally awesome for tiny living... Check it out here.) Then he added it back to the pan and turned back on the heat so it would be warm.

For the main course, I breaded some fish and chicken that we had the freezer. I have a confession to make, I don't exactly know what type of fish I cooked, it's from a local fish market in Pensacola and everything we got was delicious, I just didn't label the baggies before storing them. I cooked these in the ninja foodi for 15 minutes on 375 degrees.
It didn't turn out as crispy as I wanted it to because I had water in the bottom from making something earlier.
